It was a losing week this week! -.6 lbs Hey, I didn't start this to set any records so I'm not disappointed. It's been a really good week, food wise. I've tried several new recipes!
My new cookbook "Hungry Girl 1-2-3" and Hungrygirl.com have been awesome and refreshing new ways to prepare food and stay one step ahead of my new and crazy schedule with work, working out, and crafting. It is insane how many hours a day I am BUSY right now. I know that I'm burning calories left and right and trying to increase the burn every week. I've been going to AQUA class on Tue, Wed, and Thurs...Going to try to make it to a Saturday class occasionally and figure out a schedule for my additional time spent on the bikes or treadmills. It all adds up! Including parking in the back row of the adjacent parking lot at work..it's not far but every little bit helps I just keep trying to find a spot a little further away.
In addition to the activity this week, I tried 6 new recipes! And, I've drank a lot of water. Awesome! I am telling you these recipes and the ones I've found on Weight Watchers.com are my life savers right now. We've had and I will rate them the following recipes this past week:
Pumpkin Brownies ***** Yummy and simple ...Mix a 15 ounce can of pure pumpkin with 1 box of devils food cake mix and that's it! divide into 12 Muffin cups and bake at 400 for about 20 minutes.
Slow Cooker Pumpkin Oatmeal**** Steel cut oats and fresh pumpkin in the crock pot over night with a little honey. This one was really good in flavor but a real pain dealing with fresh pumpkin (which can and will be subsituted for sweet potatoes in the future). We add a couple of packages of the sugar in the raw and about 1/8 of a cup of vanilla soy milk, along with a couple of sprays of I can't believe its not butter! Yummy
Slow Cookin BBQ Chicken and Slow Cookin Mexican Chicken ***** both really good just a little variation on what you add to your crock pot with them. Shredded chicken can be served on salads, in tortilla raps or sandwiches whatever floats your boat.
So-Fancy Fish Pack ***** Eric and I both loved this one; however, Michael was not a fan at all I have to say though that he is trying everything and that is awesome! This was a foil pack that included Asparagus as a raft topped with Tilapia a creamy spread of seasoning and a couple of slices of lemon. You wrap up your foil on the sides and down the middle and bake in the oven for about 10-15 minutes...each foil pack is one serving.
Three-Cheese Bacon Apple Bella Frittata ***** Yummy apple, bacon, mushrooms and cheese ...really quick and really easy!
I will try to get these recipes posted out here for y'all this week so check back! I have also been drinking lots of water and starting off everyday with Focus Up. This is an all natural energy drink that really helps me get my day started and occasionally if I need a boost in the afternoon I'll have another. But, let me assure you that I will not drink another one past about 2:30pm because I tried that this week at 6:00 PM! Big mistake, I was up until 3 am!!! It's a challenge each day to make better choices and it is very easy to settle into old habits. We have to get to a point where we want change and we want health. I hope that you too are making some changes! I leave you with this quote from a visiting pastor at our church this weekend...

October 16, 2010 -3 lbs.
So this week I'm at 293.4! Yea... It was a crazy week and another very active week. I know that the key for me is the activity which is really just a change of priorities but as you all know that is not an easy change to make. So this week I went to the gym on Monday and rode the bike 8 miles I think, worked up a sweat and then got on home ...Tuesday night I didn't make it to the gym, but I did go Wed., Thursday and Today for the Aqua (water aerobics) Class. I have just got to continue to fit it all in ... I think whats harder for me than making it to the gym is ...what will be for dinner on these nights!
By the time I get home from the gym ...class is at 5:45pm it is usually at least 7:30...so then it is 8:00-8:30 before we are having dinner. I have got to work on getting this figured out. We have continued to try new things and that keeps it interesting and more like a treat than a challenge. I am going to do some meal planning tomorrow to get ready for our week.
I would like to challenge each of you who have taken the time to read this to try something new this week. Whether it is a big change or a small one just try one thing that is more healthy for you and your family.
I am making a vegetable lasagna for our home team tomorrow night. I'm excited about this new recipe from weight watchers. If I find that it is incredible I will share this recipe with you next week. I did post the Mexican Turkey Burgers earlier this week. It is a Biggest Loser recipe that we both love. Eric has been a real sport I need to add. He is not much for getting away from the tried and true but he did try some new things this week ...even cantaloupe (which he still hates).
This week we will be making some modified homemade pizza. We will add turkey pepperoni, fat free cheese, and veggies...yumm...we are making these on the Spinach tortillas....something different I'll let you know how we like those as well.
I know that my weight loss journey has only just begun and I also know that it will not be an easy journey. But, I think that the key is that you just keep doing what you know you have to do and if you are active and you are being conscious about what you are eating it will happen. And so I will leave you with this story I overheard at one of my Aqua Classes this week :
The lady that was teaching was a rather large woman ...it was my first time in her class she had a sub teach last week anyway one of the other students was telling her how great she looked and she said " ya I'm pretty proud... I've lost 130 lbs since last September...a whole person... But I've got a long way to go". The student said " I've hit my plateau at 50lbs and I've lost 50 before but I always stop here and go back to my old habits. The teacher said to her " you CANNOT STOP! You didn't work this hard to lose this much and quit now she said just keep moving, increase your activity or skip aqua and take a spin class but DO NOT QUIT!!!!".

Mexican Turkey Burgers
Mexican Turkey Burgers
A bold and spicy way to enjoy these leaner burgers from The Biggest Loser 6 Weeks to a Healthier You
Per serving (burger only): 120 calories, 23 g protein, 1 g carbohydrates
(0 g sugars), 2 g fat (1 g saturated), 40 mg cholesterol, 0 g fiber, 30 mg sodium
Yield: Serves 6
Ingredients
- 1 (20-ounce) package extra-lean ground turkey breast
- ¼ cup chopped cilantro
- ¼ cup diced red onion
- ¼ cup diced red bell pepper
- 1/3 cup diced fresh mushrooms
- 1 tablespoon Mexican seasoning or fajita seasoning
- ¼ cup low-fat Mexican-blend cheese
- 1 teaspoon minced garlic
- 6 whole grain buns or Arnold Sandwich Thins
- 6 tablespoons salsa
- 1 ½ medium avocados, peeled, pitted, and thinly sliced
- 6 tablespoons fat-free Greek-style yogurt
Instructions
- In a large mixing bowl, combine the turkey, cilantro, onion, bell pepper, mushrooms, seasoning, cheese, and garlic. There will about 24 ounces (1 ½ pounds) of mixture, or 4 cups. Divide into 6 (4-ounce) patties.
- Grill the burgers for 3 minutes on each side, or until the inside is no longer pink. Serve on whole grain buns or Sandwich Thins topped with salsa, avocado, and yogurt (instead of sour cream).

10-10-10 ... 296.4
Well folks it was a great week. In spite of my gain I know that I am on the right track. I have never got off of the scales from a 2.2 weight gain and felt good until Saturday. The difference I think was that I know I'm doing what I need to without a doubt. I know that I'm measuring what I eat and I'm moving my butt!
I really got a routine going this week with the gym and workouts. I went to the gym on my way home from work which was really the best! I have to drive right past 24 hour fitness to get on the freeway so it's not one bit out of the way. I really liked the water aerobics classes. It was actually pretty comical because they offer the class on Tue..Wed..and Thur...but everyday there is a different instructor. OMGoodness It's all a trick if you go all three days it is increasingly harder. The class on Tuesday had an older instructor. I would say that she is probably around 65 or so and she was really easy. I mean I can't say that I didn't get a workout but lets just say that it was a very comfortable beginning. Wednesday, the lady was early 20's and bubbly, she pushed a bit harder and had moves that were more challenging. Really got my heart rate up and felt like a had a good workout. The icing on the cake was on Thursday, my favorite, I swear this woman did not look like Jillian Michael's but I think she was trained by Jillian. She kicked my butt. Holy cow, this woman is about 40 and her name is Kat, she is the only one whose name I remembered. She was very memorable in a lot of ways!! I am telling you that this woman screamed like a drill sergeant and she pushed and pushed you it was great and Friday morning I felt it and Saturday morning I really felt it.
So Saturday I got up really early and went to my meeting. Then I went to meet Elissa and Karen for a great walk...now mind you I have to admit I had no idea what I was signing up for...LOL. Elissa invited me to join them for their walk at Parker Square so I'm thinking hey great I'll meet them and walk for 30 minutes or so and get on down the road. These ladies are not kidding around when they take a walk ...they take a walk. So an hour and a half later and 3.66 miles later we were done. WOW! It was awesome but a pretty big dose for a big girl just getting started. So I've completed my first 5K! YEAH Elissa you kicked my butt but thank you for the invitation! It was a great walk! My legs and tush are still throbbing but hey ...no pain no gain right?
After our walk and a quick stop at the grocery I had to get ready for my Premier Jewelry party! Had a small turnout but some of the best ladies I know were there :) Thanks for coming ladies I hope you had fun!
Another week ahead and still no pictures, I am taking them though so that will be a surprise for you when I get them up here. Next weekend is going to be a slow weekend so I'm hoping that I can get them up here for you then. I'm having a great time on this quest of mine and I know that it is not all fun and games, but a lot of hard work.
I am looking forward to another busy and active week ahead!

October 2, 2010 ,,,-3 lbs. -- 294.2
Well, today was my fourth meeting and my third week on the Weight Watchers Program. I am down a total of 7.2 lbs.
So there was a girl in my meeting today that lost a total of 90lbs.and of course she looks great! She said that she started Weight Watchers exactly one year ago today and that she had learned that whether she was up or down at the end of the week she was changing her life. I know that she has to be so proud of herself. What a great job! So, I will take this opportunity to say that if in a years time I have lost 90lbs. I will not consider myself as a failure for not meeting my original goal. I think we have to define what we want and do our best to work toward that goal.
So, as you know, Eric started off with me last week and he has been a great encouragement with keeping up with my points and tracking what I eat. He had a slow week but a loss and we discovered some places we didn't track his points correctly. So, we say there that a loss is a loss, we are just going to keep on trucking.
My new favorite treat...Frozen yogurt! OMGoodness! I had no idea it was so wonderful. So there are some local yogurt shops that I'm digging! Tutti Frutti and Yogurt Story wow...1/2 cup is only 90-100 calories and 0 fat! = 2 points Yum So, I'm really more of a lasagna girl than an ice cream girl but I have been craving sweets for some reason. I have found some great 1 point snacks and the yogurt that I can have guilt free!!!
I am going to try to get my pics up here tomorrow and I will be continuing to shrink until next week!
With that I will leave you with this great quote from Beth Moore which has me dying to see what is around the stinking corner:
